Mango & Asafoetida Pickle or Aam aur Hing ka Achar is the perhaps simplest raw mango pickle made in Punjabi households. A meal on an Indian table is usually considered incomplete without a spicy pickle to go with it. So this raw mango and asafoetida pickle makes a delightful addition and can make any meal wholesome. It takes just two days to mature and you can start smacking your lips as soon as you pop that lid off. The process of making this spicy, tangy mango and asafoetida pickle is fairly simple and you’ll be done before you even get to know it. Shopping for mangoes may take you the longest time. 🙂

The best part of this pickle is that it’s a digestive due to healing properties of asafoetida or hing. Plus, it  is towards the healthier side since it doesn’t use any oil at all. Snappy to make and delicious to eat. Enjoy it happily with your family.

Asafoetida (Hing)1/4 Teaspoon
Salt1 Teaspoon
Red Chilli Powder1.5 Teaspoon

Process to make Mango & Asafoetida Pickle or Aam aur Hing ka Achar

  1. Clean and dry the mango.
  2. Peel off the green skin and reserve for some delicious Dhaniye Pudine ki Chutney or Mint Coriander Chutney.
  3. Separate mango flesh from the seed, cut into small pieces and place in the bottle.
  4. Mix salt, red chilli powder and asafoetida (heeng).
  5. Pour from top and seal the lid.
  6. Mix really well and keep it in the sun for two days and your pickle is ready to be served.

आम और हींग का अचार बनाने के लिए कुछ मात्राएँ।

  • तैयारी का समय: १० मिनट
  • पकाने/ बनाने का समय: १० मिनट बनाने और दो दिन पकाने के लिए
  • बनाने का बर्तन: २५० ग्राम की बोतल
  • मात्राएँ: इस विधि से एक बोतल अचार तैयार होगा।

आम और हींग का अचार बनाने के लिए सामग्री।

हींगएक चौथाई छोटा चमच
नमक१ छोटा चमच
लाल मिर्च पाउडरडेढ़ छोटा चमच

आम और हींग का अचार बनाने की विधि। इस अचार को बनाने में तेल का उपयोग नहीं होता।

  1. कचे आम को धो कर सूखा लें।
  2. आम के छिलके को छील कर धनिया पूदिना की चटनी के लिए अलग रख लें।
  3. आम का गूदा चाक़ू से छील कर छोटा काट लें और एक बोतल में भर लें।
  4. नमक, लाल मिर्च पाउडर और हींग को एक साथ मिला कर अच्चे से कूट लें।
  5. इस मिश्रण को आम के ऊपर डाल दें और ढक्कन बैंड कर के अच्चे से मिला लें।
  6. अब इस बोतल को दो दिन धूप में रखें।
  7. अचार पक जाने पर प्यार के साथ घरवालों और दोस्तों को परोसें। 🙂
