Batata Vada Recipe – Batata Vada is the Key to a Great Vada Pav

So, a good Vada Pav is not possible with a good batata vada. And, my forever request to my friend Dipak whenever I visit Mumbai is to meet me at the airport with a double Vada Pav. And Dipak know where they make good batata vada and hence great vada pav. Batata vada is a popular street food in Maharashtra and is widely available at all nook and corners. “Batata” incidentally means potato in Portuguese who introduced potatoes in India.

In case you want to go easy on the carbs, batata vada goes equally well with some spicy mint & coriander chutney as well as tamarind chutney. Choose your pick or use both of them. My son Sidhant is a big fan of vada pavs and that’s what is being made for lunch today. Here is a simple recipe for making batata vadas that will contribute to a great vada pav for you. Eat it as a snack or lunch on it, it is your call entirely.

Some variations for making batata vada

Please feel free to modify this recipe as per your taste. This recipe doesn’t use many other ingredients that can be used to make it more flavourful because I like to keep such snacks less spicy so that kids can enjoy them as well. You can add hing to this mix for an additional twang. You can add finely chopped green chillies, onions as well as garlic. I have avoided all three. You can add pepper or even more red chilli powder for additional heat. Even fresh green peas may be added if you wish more vegetables for your children. you may want to mash them though.

Process to make Batata Vada

  1. First of all, get your ingredients in one place.
  2. Then, make the slurry batter with chickpea flour, salt, red chilli powder, carom seeds and water. Keep aside.
  3. Boil, peel and grate potatoes. Finely chop ginger and coriander.
  4. Now, heat ghee in a frying pan. My vegan friends can use vegetable oils for this.
  5. Add mustard seeds and when they crackle, add cumin seeds followed by ginger. Saute for a minute and add potatoes.
  6. Mix well and add turmeric powder, dried mango powder and salt followed by chopped coriander and curry leaves.
  7. Mix well and when everything is well incorporated remove from fire.
  8. Make small balls of the mixture. You should be able to make 6 medium sized balls with this mixture.
  9. To fry, heat oil in a kadhai or a wok.
  10. Dunk each ball into the besan batter or slurry and gently drop into medium hot oil.
  11. Fry till you get a nice golden brown colour. Remove and rest over a napkin to drain excess oil.
  12. Serve with a green mint coriander chutney and relish with a cup of tea. Or make it into a vada pav and eat for lunch or even a snack.

Process to make Batata Vada

  1. सारी सामग्री एकत्रित कर लें।
  2. बेसन, लाल मिर्च पाउडर, नमक, अज्वैन और पानी के सहित एक घोल बना लें।
  3. आलू उबाल लें और हरा धनिया और अदरक को बारीक काट लें।
  4. एक फ़्राइइंग पैन में घी गरम कर लें। मेरे वीगन दोस्त अपनी पसंद के तेल का उपयोग करें।
  5. राई को भून लें और फिर ज़ीरा डाल का भून लें। अब इसमें बारीक कटी हुई अदरक को भूने और फिर आलू मिला लें।
  6. अच्छे से मिला लें और फिर इसमें हल्दी, अमचूर और नमक डाल लें। फिर इसमें हरा धनिया और करी पत्ता मिलएँ।
  7. जब सब अच्छे से मिल जाए तो आँच से उतर के कमरे के तापमान पर आने दें।
  8. इस मिश्रण को मध्य वर्ग की गेंद के आकार में बना लें।
  9. कढ़ाई में तेल गरम कर लें।
  10. बनाए हुए गोलाईयून को बेसन के घोल में डालें और फिर गरम तेल में हल्के से छोड़ दें।
  11. कड़ाही के प्रकार के अनुसार, एक बार में ४-५ गोले डाल कर सुनहेरा भूरा होने तक तल लें।
  12. सुनहेरा हो जाने पर एक पलते पर रखे पेपर नैप्किन पर निकाल लें और हरी चटनी और चाई के साथ इसका लुत्फ़ उठाएँ।
