Chicken Cafreal Recipe, Delicious Goan Chicken Cafreal Recipe

Chicken Cafreal recipe is a really classic Goan dish. It is one of the so few dishes made in India with a lovely green curry paste. The paste is a wonderful blend of aromatic spices that I am almost sure that your senses will jump with excitement.

My son, Sidhant had seen a food show on television where Chicken Vindaloo was being made and he requested me to make the same for him. Unfortunately, I was out of dry red chilies that give vindaloo that deep red colour but had some fresh green chilies. Hence, I decided to make Chicken Cafreal instead. I also took the classic routine that involved marinating the chicken overnight. If you don’t have much time, you can maybe marinate it for an hour. Sidhant was super happy with what turned out and I was too.

Process to make Chicken Cafreal Recipe

  1. First of all, marinate the cleaned and cubed chicken overnight with some salt and two tablespoons of cafreal paste.
  2. Heat a tablespoon of ghee in a thick bottomed pan and fry the sliced onions. When they are translucent remove from fire and cool (this is a tip I learnt from the food show).
  3. Once onions cool down put them on flame again and add the remaining cafreal paste. Saute for a minute.
  4. Now add the marinated chicken and sear on high to seal the juices. This takes about 5 minutes.
  5. Reduce flame to medium-low and cook covered till done. This takes about 20-25 minutes.
  6. Remove from flame and check the seasoning.
  7. Finally, serve it with pao bread, Goan bread called poee or plain rice.

सामग्री चिकन कफ़्रेल बनाने के लिए।

चिकन या मुर्ग़बिना हड्डी के और १ इंच चकोर कटा हुआ५०० ग्राम
प्याज़सीधा कटा हुआ२ मध्य वर्ग के
कफ़्रेल मसाला४ बड़े चमच
तेल या घी२ बड़े चमच

चिकन कफ़्रेल बनाने की विधि।

  1. चिकन को २४ घंटे के लिए दो बड़े चमच कफ़्रेल मसला लगा कर छोड़ दें।
  2. सारी सामग्री बटोर लें। प्याज़ को लम्बा काट लें।
  3. २ बड़े चमच घी को कढ़ाई में गरम कर लें और प्याज़ हल्का लाल कर लें। अब प्याज़ को ठंडा होने दें।
  4. ठंडा होने पर प्याज़ और कफ़्रेल मसाले को मिला लें और आँच पर चढ़ा दें। एक मिनट तक भून लें।
  5. अब इसमें मसला लगे चिकन को डाल कर तेज़ आँच पर पाक लें। लगभग ५ मिनट के लिए।
  6. आँच धीमी कर लें और ढक्कन लगा कर २०-२५ मिनट तक पाक लें या जब तक चिकन पक ना जाए।
  7. आँच से हटा कर नमक ठीक कर लें।
  8. पाव या ग़ोआन पोई या सादे चावल के साथ इसका लुत्फ़ उठाएँ।
